Chorba

Ramadan classic.

Ingredients

  • 1 onion diced finely
  • Small meat pieces
  • 1 courgette
  • chickpeas (optional)
  • 1 small potato
  • 1 tbs tomato paste
  • 1 tbs pepper paste
  • ½ tsp black pepper
  • ½ tsp cinnamon
  • ½ tsp dried mint
  • One third bunch coriander chopped
  • 1 tsp salt
  • 1½ jug hot water

Instructions

  1. Heat 3tbs oil in cocotte.
  2. Add onion - fry for few seconds.
  3. Add meat - fry.
  4. Add seasoning - fry.
  5. Add ½ quantity of coriander.
  6. Add veg, whole.
  7. Mix 2 pastes in a jug of water and add.
  8. Lock cocotte and cook for 15 minutes after whistle.
  9. Once whistle stops add small cup of washed frik.
  10. Cook for 15 minutes.
  11. Add remaining colander.
