Ramadan classic.
Ingredients
- 1 onion diced finely
- Small meat pieces
- 1 courgette
- chickpeas (optional)
- 1 small potato
- 1 tbs tomato paste
- 1 tbs pepper paste
- ½ tsp black pepper
- ½ tsp cinnamon
- ½ tsp dried mint
- One third bunch coriander chopped
- 1 tsp salt
- 1½ jug hot water
Instructions
- Heat 3tbs oil in cocotte.
- Add onion - fry for few seconds.
- Add meat - fry.
- Add seasoning - fry.
- Add ½ quantity of coriander.
- Add veg, whole.
- Mix 2 pastes in a jug of water and add.
- Lock cocotte and cook for 15 minutes after whistle.
- Once whistle stops add small cup of washed frik.
- Cook for 15 minutes.
- Add remaining colander.
