Healthy Granola

A crunchy cocoa granola for breakfast or snacking.

Ingredients

  • 360 g rolled oats
  • 50 g chopped almonds
  • A generous handful of whole almonds
  • 1/2 cup honey
  • 1/2 cup cocoa
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • Pinch of salt
  • Broken pieces of dark chocolate (optional)

Instructions

  1. Preheat the oven to 160 C and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped almonds, whole almonds, and the dry ingredients.
  3. Heat a small pot over medium-low heat and combine the honey, cocoa, coconut oil, and vanilla extract.
  4. Cook for a few minutes until everything is well mixed, then pour it over the oat mixture and stir to combine.
  5. Spread the mixture onto the baking sheet, bake for 25 to 30 minutes, then let it cool for 1 to 2 hours.
  6. Once fully cooled, mix in broken pieces of dark chocolate if you like.
