Healthy Granola

A crunchy chocolate granola baked into clusters.

Ingredients

  • 360 g rolled oats
  • 50 g chopped nuts (almonds or walnuts)
  • Whole nuts (almonds or walnuts) (handful)
  • 1 tbsp coconut oil
  • 1/2 tbsp salt
  • 1/2 cup honey
  • 1/2 cup cocoa
  • 1/2 cup water
  • 1 tsp vanilla extract
  • More dark chocolate (85%), to add after cooling

Instructions

  1. Preheat the oven to 160 C.
  2. In a large bowl, combine the oats, nuts, and salt.
  3. Heat a small pot over medium-low heat and combine the honey, cocoa, coconut oil, and water.
  4. Cook for a few minutes until everything is dissolved.
  5. Pour the chocolate mixture over the oat mixture and stir to combine.
  6. Transfer the mixture to a baking sheet covered tray.
  7. Spread it evenly, press it down to flatten.
  8. Bake for 25 to 30 minutes.
  9. Let it cool for 1 to 2 hours.
  10. Break it into clusters and add dark chocolate.
