Msemmen

Msemmen is a traditional Algerian pancake that is served with honey, jam, or butter. It is a popular breakfast dish in Algeria and is often enjoyed with a cup of tea or coffee.

Ingredients

  • 2 cups of fine semolina
  • 1 cup of bread flour
  • 1 tsp of salt
  • 1¼ cups of water

Instructions

  1. In a large mixing bowl, combine the semolina, flour, and salt.
  2. Gradually add water to the dry ingredients and knead the dough until it is smooth and elastic.
  3. Leave dough overnight to rest.
  4. Divide the dough into small balls and let them rest for 15 minutes.
  5. Dunk the balls in oil and flatten them with your hands, then fold the edges to form a square.
  6. Heat a skillet over medium heat and cook the msemmen on both sides until golden brown.
